Meet the team

|
Chef Jose L. Luna
Chef Luna grew up in Jalisco, Mexico. He comes from three generations of Mexican chefs. His mother and
grandmother were both restaurateurs, grew their own vegetables and herbs, made fresh cheese, and
harvested their own corn to grind to make tortillas. Their menus were ever changing, based on the season,
and upon what was available at the market. Through them, Chef Luna realized the importance of fresh food.
He has consistently maintained his appreciation for quality and he carries with him these lessons and
Mexican culture.
Chef Luna arrived in Chicago in the early 1980s, with a vision to expand his knowledge of the culinary arts,
and to learn the fundamentals of international cooking. He attended culinary school, received his Certified
Executive Chef Certification, joined the American Culinary Federation, was honored as the Chef of the year,
has been a featured speaker for the National Restaurant Association, and is a member the American
Academy of Chefs. Chef Luna was part of the Vision USA culinary team that took a gold medal in Seoul,
Korea. He has participated in several international ice carving competitions, spent time in Ireland last year
on a culinary exchange, and he enjoys traveling in order to explore and expand his knowledge of other
cuisines.
Chef Luna's early career progressed through several career-enhancing executive chef and management
positions within the hotel and country club industries. We are very proud to have Chef Jose Luna as our
head chef Salsa 17. With over 30 years of culinary experience under his belt, his focus and knowledge is
truly unsurpassed. His creativity, passion, and positive energy shine through each dish at Salsa 17.
